Ingredients
  

  • 6 chicken breasts bone-in
  • 2 cups fresh blueberries
  • 1/4 cup balsamic vinegar
  • 3 tablespoons honey
  • 3 tablespoons ketchup
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder

Instructions
 

  • Combine blueberries, balsamic vinegar, honey, ketchup, garlic powder, and ginger powder in a medium saucepan.
  • Bring mixture to a low boil over medium heat, stirring occasionally.
  • Reduce heat and simmer for 10-12 minutes until sauce thickens, stirring occasionally.
  • Remove from heat and allow the sauce to cool for about 10 minutes.
  • Pour the BBQ sauce into a blender and blend until smooth.
  • Reserve 2/3 of the sauce for serving. Place chicken breasts and remaining 1/3 cup of BBQ sauce into a zip-top bag.
  • Seal bag and turn to coat chicken evenly. Marinate in the refrigerator for 30 minutes to 1 hour.
  • Preheat grill to medium-high heat (around 375-400°F).
  • Remove chicken from marinade and discard used marinade. Grill chicken for 7-8 minutes per side until internal temperature reaches 165°F.
  • During the last 2 minutes of cooking, brush chicken with a portion of the reserved sauce.
  • Remove chicken from grill and let rest for 5 minutes. Serve with remaining BBQ sauce.

Notes

For best results, reserve most of the BBQ sauce before marinating to avoid cross-contamination. The sauce can be made up to 3 days ahead and stored in the refrigerator. This sauce also works great with pork chops or as a glaze for grilled salmon.
