Equipment

Ingredients
  

  • pounds ground chuck 80/20 lean-to-fat ratio
  • kosher salt for seasoning
  • black pepper freshly ground
  • 4 hamburger buns brioche or potato buns recommended
  • vegetable oil for oiling the grill grates

Optional Toppings

  • 4 slices cheese American, cheddar, or your preference
  • 1 tomato sliced
  • 4 leaves lettuce
  • 1 red onion thinly sliced
  • condiments ketchup, mustard, mayonnaise, etc.

Instructions
 

  • Preheat your grill on high heat for at least 15 minutes to reach proper temperature.
  • While the grill heats, divide 1½ pounds of ground chuck into 4 equal portions (about 6 ounces each).
  • Gently form each portion into a ball, then shape into patties about ¾ inch thick without overworking the meat.
  • Press your thumb gently into the center of each patty to create a slight indentation, which prevents the burger from puffing up during cooking.
  • Clean the grill grates thoroughly and oil them to prevent sticking.
  • Just before placing on the grill, season both sides of the patties generously with kosher salt and freshly ground black pepper.
  • Place the patties on the hot grill and cook undisturbed for about 6 minutes. Resist the urge to press down on the burgers.
  • Check if the patties release easily from the grill. If they stick, they need more time to develop a crust. When they release naturally, flip once.
  • Cook for approximately another 6 minutes on the second side for medium doneness (160°F internal temperature).
  • If adding cheese, place it on the patties during the final minute of cooking and close the grill lid briefly to melt.
  • Remove burgers from the grill and let rest for 3-5 minutes to allow juices to redistribute.
  • While the burgers rest, lightly toast the buns on the grill, cut side down, for about 30 seconds.
  • Assemble burgers with desired toppings and condiments on toasted buns.

Notes

Nutritional information is for the basic burger on a bun without additional toppings or condiments. The key to a juicy burger is using ground beef with at least 20% fat content and handling the meat gently. Never press down on burgers while cooking, as this squeezes out valuable juices.
